Executive / Lead Chef is directly responsible for implementing and following the culinary standards and overseeing the culinary operations of all Ginza store branches. Lead the organizational task to ensure that kitchen operations run efficiently with the latest trend and innovations in the food industry.

Developing and creating menus, budgeting and financial planning, and participating in business development.

  • Manage the day-to-day Kitchen and Culinary operations of Ginza team which includes: food service preparation, maintenance of quality standards, technique, portion, sanitation, and cleanliness.
  • Standardize Production Recipes to ensure consistent quality.
  • Collaborating with the Head Chef to set kitchen standards and quality procedures.
  • Responsible for the continued growth of overall kitchen store operations: Food Cost Analysis, Quality, and Presentation and Developing unique and cuisine-appropriate menus for the brand.
  • Support management with Catering Proposals, Menu Pricing and Menu Innovation.
  • Staying current on developing trends in the restaurant industry.
  • Monitoring of inventory and purchasing for supplies of kitchen operation in coordination with the commissary head.
  • Assist Manager and Head Chef & Marketing in Menu Planning and Costing for Special Event Catering.
  • Execute all off-site Catering that requires on-site support.
  • Collaborate with General Managers on expense tracking for accurate financial projections.
  • Ensure that appropriate Sanitation, Maintenance and Safety Standards are being followed at all times.
  • Train and manage kitchen head and personnel.

Qualifications/Requirements

Executive Chefs use a variety of culinary skills and soft skills to lead kitchens and provide excellent meal service to patrons.

These skills include:

  • Expert knowledge of the restaurant or organization’s cuisine
  • Advanced culinary skills including food preparation, flavor pairings and other cooking best practices
  • Ability to develop unique recipes
  • Current knowledge of trends in the restaurant industry
  • In-depth knowledge of federal, state and local food handling regulations
  • Comfortable training, directing and supervising kitchen staff
  • Exceptional leadership skills, including motivation and goal-setting
  • Excellent communication and interpersonal skills
  • Time management and organization
