Position to be filled: EXECUTIVE CHEF
Job Description:
- The Executive Chef is responsible for the comprehensive oversight of all key kitchen sections (e.g., Commissary, Butchery, Dim Sum), alongside menu development for Western and Asian cuisines, cost control, and inventory management. The position is expected to manage and mentor a large culinary team, ensuring HACCP compliance, and aligning culinary initiatives with corporate goals.
- At least 5 years of experience as an Executive Chef or in a similar leadership role in a casino or large-scale hospitality operation.
- Extensive experience in high-volume catering, banqueting, and food production
- Proven experience overseeing Commissary, Garde Manger, Hot Production, Butchery, and Dim Sum Production.
- Strong background in both Western and Asian cuisines, with hands-on experience in creating innovative, high-quality dishes.
- Pastry experience is preferred, with the ability to oversee pastry production and maintain consistency in high-volume environments.
- Strong experience in food forecasting, ordering systems, and inventory management.
- Proven ability in recipe development, menu writing, and food cost control.
