About the role

This role is pivotal in delivering memorable dining experiences and maintaining the highest standards of culinary excellence that reflect our brand's commitment to quality cuisine and outstanding service.

1. Prepare and cook a variety of authentic Chinese cuisine dishes according to established recipes, plating standards, and quality specifications
2. Oversee food preparation, cooking techniques and presentation for event functions and catering services
3. Manage mise en place and ensure all ingredients are properly prepared, stored and organised in the kitchen
4. Maintain strict adherence to food safety, hygiene and sanitation standards at all times
5. Collaborate with the culinary team and event coordinators to understand guest requirements and dietary preferences
6. Monitor food quality and consistency throughout service periods and make necessary adjustments
7. Manage kitchen equipment and ensure proper maintenance and cleanliness of all cooking stations
8. Assist in menu development and special event planning with focus on Chinese cuisine offerings
9. Train and guide junior kitchen staff on food preparation and plating techniques when required
10. Control food costs by monitoring portion sizes, minimising waste and managing ingredient usage efficiently

1. Proven experience as a Chinese Cuisine Chef or similar culinary role in a hotel, restaurant, catering or events environment
2. Extensive knowledge of authentic Chinese cooking techniques, ingredients and traditional recipes
3. Strong culinary skills with expertise in wok cooking, stir-frying, steaming, roasting and other Chinese cooking methods
4. Excellent understanding of food safety and hygiene standards, including HACCP principles
5. Ability to work efficiently in a fast-paced environment whilst maintaining quality and presentation standards
6. Strong teamwork and communication skills with the ability to work collaboratively with kitchen and front-of-house staff
7. Physical stamina and the ability to stand for extended periods whilst working in a hot kitchen environment
8. Flexibility to accommodate part-time scheduling and event-based work patterns
9. Relevant culinary qualifications or certifications are preferred but not essential if equivalent experience can be demonstrated
10. Knowledge of current food trends and the ability to adapt recipes whilst maintaining authenticity
