Executive Chef
Job Summary:
A highly skilled and driven Executive Chef with strong experience in Japanese cuisine to lead kitchenoperations, product development, and quality control across all outlets. The ideal candidate will have abalance of culinary creativity, operational discipline, and leadership capability, with hands-on experiencein R&D, kitchen audits, and team management.
Key Responsibilities:
- Kitchen Management
Oversee daily kitchen operations to ensure efficiency, consistency, and high-quality foodoutput
Manage kitchen staff, including hiring, training, scheduling, and performance evaluation
Enforce proper food handling, sanitation, and safety standards- Research & Development (R&D)
Develop and innovate Japanese menu offerings aligned with brand direction
Standardize recipes, portioning, and plating to ensure consistency across branches
Conduct food trials, costing, and menu optimization- Audit & Quality Control
Perform regular kitchen audits to ensure compliance with company standards and SOPs
Monitor food quality, presentation, and taste across all locations
Implement corrective actions and continuous improvement initiatives- Cost Control & Inventory
Manage food cost, wastage, and inventory levels
Work closely with procurement to ensure quality and cost-effective sourcing of ingredients- Operational Support
Collaborate with management on menu planning, promotions, and new store openings
Provide technical support and training to kitchen teams across branches
Qualifications:
- Proven experience as an Executive Chef or Senior Sous Chef
- Minimum 2–5 years of experience in Japanese cuisine (e.g., sushi, sukiyaki, donburi, hot kitchen)
- Strong background in R&D, kitchen audits, and multi-unit kitchen management
- Excellent leadership and team management skills
- Solid understanding of food costing, inventory, and kitchen operations
- Ability to work in a fast-paced, multi-branch environment
- Preferred Skills:
- Experience in opening new restaurant branches
- Knowledge of Japanese ingredients, techniques, and modern trends
- Strong organizational and problem-solving skills

Willing to do fieldwork and store visits
