Key Responsibilities:

• Monitor daily food and beverage costs and analyze variances between actual and standard costs.
• Conduct regular spot checks and audits on inventory, receiving, and issuing procedures in kitchens, bars, and stores.
• Review purchase requests and ensure that procurement is in line with approved budgets and cost-effective practices.
• Prepare cost reports, including food cost, beverage cost, operating supplies, and overall departmental cost analysis.
• Maintain accurate records of inventory levels and coordinate periodic stock counts.
• Work closely with the kitchen and F&B departments to ensure proper recipe costing and portion control.
• Analyze supplier pricing and assist in vendor evaluations to optimize purchasing strategies.
• Coordinate with the Finance and Accounting team for accurate month-end closing related to cost accounts.
• Ensure compliance with hotel policies and financial procedures.
