About the Opportunity
GA HR Consultancy Inc., the accredited executive search and headhunting partner of one of the Philippines' growing and highly recognized Quick Service Restaurant (QSR) brands, is looking for an experienced QUALITY ASSURANCE MANAGER (Bakery & Dough Production) to lead quality assurance, food safety, and dough quality management within its commissary operations.
This opportunity is ideal for professionals with hands-on experience in bakery, pizza, bread, frozen dough, or large-scale commissary operations who possess a strong understanding of dough formulation, fermentation, proofing, bakery production processes, and food safety systems.
The successful candidate will play a key role in ensuring consistent dough quality, maintaining food safety and regulatory compliance, driving continuous process improvements, and supporting operational excellence across commissary and production facilities.

What You'll Be Responsible For
Dough Quality & Product Consistency- Ensure consistency and standardization of dough formulation, mixing, fermentation, proofing, portioning, storage, and handling processes.
- Monitor critical quality parameters such as dough texture, elasticity, hydration, fermentation, weight, temperature, and shelf life.
- Investigate and resolve dough quality issues through root cause analysis and corrective actions.
- Work closely with production teams to improve product consistency and manufacturing standards.
- Lead quality assurance activities across commissary and bakery production operations.
- Ensure compliance with HACCP, GMP, SSOP, sanitation, and food safety standards.
- Conduct internal quality audits, inspections, and process validations.
- Develop, review, and continuously improve quality systems, SOPs, and operational procedures.
- Ensure compliance with company quality standards and regulatory requirements.
- Partner with Production, Supply Chain, Operations, Purchasing, and Training teams to improve product quality and manufacturing efficiency.
- Analyze quality trends, customer feedback, and production data to identify improvement opportunities.
- Lead corrective and preventive action (CAPA) initiatives.
- Recommend process enhancements to improve product consistency, food safety, and operational performance.
- Lead, coach, and develop the Quality Assurance team.
- Train production personnel on proper dough handling, food safety, sanitation, GMP, and quality standards.
- Promote a culture of quality, accountability, and continuous improvement throughout the organization.
- Prepare quality performance reports, audit findings, KPI dashboards, and management recommendations.
- Monitor quality metrics and implement initiatives that improve operational performance and product consistency.
- Present quality improvement updates to management.
What We’re Looking For
Education- Bachelor's Degree in Food Technology, Food Science, Nutrition, Industrial Engineering, Microbiology, or any related field.
- At least 5 years of Quality Assurance experience within food manufacturing or commissary operations.
- Strong hands-on experience in bakery, pizza, bread, frozen dough, or dough production environments.
- Solid understanding of dough formulation, fermentation, proofing, baking processes, and dough quality management.
- Experience managing quality systems, food safety compliance, and production audits.
- Exposure to high-volume food manufacturing or commissary operations is highly preferred.
- Strong knowledge of bakery production and dough processing.
- Excellent understanding of HACCP, GMP, SSOP, sanitation, and food safety standards.
- Strong analytical and problem-solving skills.
- Experience in root cause analysis and corrective action implementation.
- Leadership and people management capability.
- Excellent communication and stakeholder management skills.
